Shamrock Lollipops

These kiwi shamrock lollipops are a festive, fun and easy St. Patrick's Day treat.

Ingredients

  • 4 ripe kiwis
  • 1 cup melted chocolate
  • 4 tbsp sprinkles

Instructions

  1. Use a paring knife to remove the skin from 3 or 4 ripe kiwis.

  2. Slice into 1/2 - 3/4 inch thick rounds (thick enough for the lollipop stick).

  3. Insert a lollipop stick into each slice and push about halfway up. 

  4. Melt 1/3 cup white chocolate chips or candy melts for 30 to 45 seconds in the microwave. Stir until smooth.

  5. Dip the top of each kiwi slice into the melted candy, use a spoon to smooth as needed. 

  6. Place on a parchment-lined tray.

  7. Sprinkle the sprinkles.

  8. Refrigerate for 5 minutes to set.
